Don’t worry, I am not going to open the post with a quote this time. Although I was thinking about them, it stopped right away when I was editing a picture of corns.
I also wanted to open this recipe with, “That day when we went out to dine, we tried this amazing bur…,” no, I cannot do that either. Why? Because I rarely eat out.
I guess that is what special about this blog and my food adventures. I get to DIY the things I never tasted before and make them from scratch.
To some, it may sound depressing but to all the other fellow doers, it sounds exciting.
Hmm… focusing the telescope onto the title, “Dal-free Vegetable vada patties,” I cannot help but smirk at my naming-a-recipe talent.
As the name suggests, this patties has no dals or dhals or grams. They are purely made of vegetables, wheat flour and of course, salt.
Always add salt little by little. After all, everybody’s taste buds are different. Even among the people that lives in the same house and eats same food.
This recipe is inspired by Homemade hash browns with spinach and carrot by Inspired-recipes.com.
Method is simple: Grate vegetables, squeeze out water, add salt, wheat flour and mix. The only challenge will be not spilling them onto the counter. A big bowl is your solution.
Instead of chunky patties like the original, I flattened them thin and substituted corn starch with wheat flour. One step towards healthy eating!
Grated vegetables might look a bit dry and separate. Once salt is added, they bring out the water in them and this helps the wheat flour bind every ingredient together.
Addition of corn kernels gives different dimension to the patties and coriander makes them smell and taste like Vadais.
They are best eaten hot!
Dal-free vegetable vada patties: 6-ingredient and stove-top
Prep Time: 25 minutes
Cook Time: 1 hour
Servings: 15 patties
INGREDIENTS
1 small onion roughly chopped
1 cup finely grated carrots excess water squeezed and tightly packed
1 cup finely grated white potato excess water squeezed and tightly packed
1/4 cup boiled and roughly chopped regular corn kernels optional
1 tablespoon roughly chopped coriander leaves
5 tablespoon wheat flour leveled
1 teaspoon tablesalt or according to one’s taste
1/8 cup sunflower oil or any neutral oil more or less
Optional garnish
few coriander leaves
few corn kernels
Serve with
Chappatis(flatbreads) or burgers
INSTRUCTIONS

- In a large bowl, add chopped onion, grated carrot, grated potato, chopped coriander, corn kernels, salt and required amount of wheat flour to make the mixture come together.
- Heat a dosa tawa on medium flame. Make 2-inch(in diameter) balls of the mixture and flatten it thin.
- Once the tawa is hot, drizzle some oil. Add four patties at a time. Cook for 10 minutes on each side or until cooked through.
- Transfer to a wire rack. Serve with chappatis (flatbreads) or burgers or enjoy as it is.
RECIPE NOTES
- Add salt in small portions and check for the taste.
- Don’t forget to cook the patties 10 minutes on each side.
