A Wholesome Barley Soup


I love food but not eating, though. I love looking at food pics on the internet. I admire them. I am in awe with them!

It must be the drool worthy photography.

I don’t really drool after desserts, though! My kind of food is always vibrant, loaded with vegetables and full filling on the stomach!

One such food is this barley soup loaded minimally with leafy greens, mushroom and carrot!

  • Plus, it has anti-inflammatory properties because of turmeric!

this wholesome meal.

INGREDIENTS

1+ ½ T – Barley
1 small Tomato
1 small white button mushroom
An inch of ginger (peeled)
A few pods of garlic(refer pic)
1 small Carrot
One long sprig of green onion(scallions)
Small bunch of spinach(refer pic)
¼ t – turmeric powder (avoid if using keerai kadaiyal stock)
1+ ¼ Cup of Keerai Kadaiyal stock [ residual stock from spinach-tuvar lentils-onion-tomato-Indian green chilli-ginger-Indian tamarind curry- turmeric powder] OR substitute it for regular vegetable stock
¼ t – fine salt 

RECIPE INSTRUCTIONS

1.     Rinse Barley twice and soak in enough water for one and a half hours.

2.     Finely chop the tomato. Thinly slice the mushroom. Grate ginger and garlic using a grater or pound using a mortar and pestle. Dice the carrot  in small size. Roughly chop green onions and spinach.

3.     In a wok, add oil and wait for it get medium hot. Add chopped green onion white part. Saute. Then add everything and saute for a minute.

4.     Add the stock, salt, stir. Let it come to a boil. Turn the heat to low and let it simmer for about twenty minutes or until the barley cooked through.

5.     Serve hot with few sliced green onions on top as garnish.

RECIPE NOTES

1.     Chop Spinach as small as possible for a sophisticated eating experience LOL because
they were making the soup spill on the table!

2.     Adjust salt according to your taste.

3.     For that yellow tinge, add turmeric powder. I did not add as the colour was already
present from the Keerai Kadaiyal stock.

HOW DOES IT TASTE

It was wholesome and filling. I could not finish the
whole thing. You can definitely do two servings.
