The messy and juicy lettuce and baked tomato wraps
Eat more salad they said, So I am eating!
This is an perfect snack for a group of friends and for those who want people to come together.
Because you cannot just lift and eat it. You have to carefully pull everything together without spilling and push! Like how you eat puchkas or panipuris.
- They are messy to eat!
- The tomatoes are juicy because of roasting. You can feel them explode in your mouth!
- Peanuts give hard crunch to the wrap.
- Lettuce lends soft crunch.
- Paneer doesnt really play any role. I added them because I thought there wont be any colour pop but peanuts was enough to make that happen.

INGREDIENTS
Romaine lettuce leaves – 2
Tomato – 92g (or five small tomatoes)
Dried oregano – 1/2 teaspoon
Red chilli flakes – a generous pinch
Tablesalt – 1/4 teaspoon
Pepper powder – 1/4 teaspoon
Refined Sunflower oil – 1 teaspoon
Roasted unsalated peanuts (without skin) – 25g
Paneer – 21g (optional)
RECIPE INSTRUCTIONS
- Preheat the oven for 10 minutes at 210C temperature.
- Wash the tomatoes, cut each of them in half and remove the green part of it. In a small oven safe dish or in a tiny cake tin, add oil, pepper powder, salt, red chilli flakes, oregano and mix will. Add the slices of tomatoes into it and mix well.
- Baked the tomatoes for 30 minutes.
- Wash the lettuce leaves, dry them well, remove the middle stem. Cut the leaves into 10 pieces.
- Pound the peanuts into coarse chunks. Crumble the paneer.
- On each piece of the cut lettuce, add the baked tomatoes, sprinkle peanuts and paneer.
- Done
NOTES
The lettuce slices could seem too small but that’s the point of this recipe. It could bring people together!
