Simply grind some flaxseeds in spice grinder coarsely, measure and use for this recipe.

How does this ‘gluten free pearl millet and flaxmeal crackers’ tastes like?

  1. They are light and savoury, sometimes delicate too. Do not over bake them.
  2. They are true to their name, crackers. Snaps really well.
  3. Has enough salt from the butter.
  4. A very light snack for someone who wants retail taste in homemade goods.

Gluten free pearl millet and flaxmeal buttery savoury crackers

Ingredients

Pearl Millet/Bajra/Kambu flour – 30g

Homemade flaxmeal (coarsely ground flaxseed) – 4g

Cold Salted Butter – 10g

Water – 1 Tablespoon (varies according to the quality of the flour)

White sesame seeds – 1/2 teaspoon (optional)

Recipe Instructions

  1. Preheat oven for 10 minutes at 180C.
  2. In a bowl, add pearl millet flour, flaxmeal and cold butter. Mix the butter with other mixture thoroughly.
  3. Add water one teaspoon at a time, until the dough comes together without crumbling.
  4. Divide the dough into three.
  5. A tortilla press was used for this recipe. Add the dough between two sheets of a parchment paper and press once. Sprinkle some white sesame seeds on top and gently press again.
  6. Alternately, you can roll the dough between two parchment paper with a rolling pin.
  7. Transfer the cracker discs into a baking sheet and bake for 20 minutes or until the crackers slightly turn brown.

Notes

Keep an eye on the crackers after 12 minutes as the baking time varies from oven to oven and also this crackers are thin. They might cook faster in other ovens.

I am limiting my gluten and dairy intake. I will not be eating these crackers (though, 10g of butter isn’t much) on the same day. I suggest you don’t too if you have health complications like me too.
