Mint-Watermelon-Paneer Salad

Woo hoo, Summer is here!! Wait, it’s already in, isn’t it? Breaks out in Taylor’s ‘I see I’m too late…’ Even though we don’t invite summer with much excitement, you cannot deny that this is the best. fruit. month. ever!

Think about all the exotic fruits you can eat..Watermelon,Pineapple, Cantaloupe, Cucumber(yes, technically it’s a fruit) and most importantly, Mango . That’s a tear of joy!
Without much further ado, let’s find out how I wanted to make this Mint-watermelon-Paneer Salad.

I have this bad habit where I would search recipes for the things that is abundant at home on Pinterest. Pinterest is the best friend I ever had except some of its emotions are closed-off(copyrighted!). I came across this simple salad with only watermelon, mint and feta cheese. It didn’t seem like a wise thing to do because..,

  1. Those recipes does not always feel personal when you copy it step by step, salt to salt.
  2. And the usual salad was bland to my taste. Ahem, I have taste intuition.

I have nothing against few ingredient recipes.

I am all about minimalism.One ingredient watermelon ice-creams are fab and eye-catchy!

But my heart yearned something zing that can go with the watermelon salad. I certainly cannot add Garam masala to it. I learned my lesson with a certain Cantaloupe marinated salad. So I ended up making a basic salad that my dad once made for me as a kid.

Here’s the recipe!

Mint-Watermelon-Paneer Salad

Prep Time: 10 to 15 minutes
Serving: 1 person

INGREDIENTS

½ Cup Watermelon seeds removed
¼ Cup crumbled feta cheese or freshly made Paneer or a little less
1 teaspoon salt and pepper half teaspoon of each
A few sprigs of mint leaves.

INSTRUCTIONS

  1. Wash and cut the watermelon into big chunks, reserve half or one cup for this recipe in a bowl. Either make juice or smoothie with the remaining fruit or freeze it for later.
  2. Add crumbled feta cheese to it.
  3. Sprinkle salt and pepper.
  4. You can either add the whole mint leaves or mince to your preference.

RECIPE NOTES

  • Adding salt makes the salad watery. Therefore, consume as soon as possible.
  • Use firm feta cheese that has been at least made a day before and stored in the refrigerator.
  • Do not over mix the feta.
  • Removing seeds is optional. You are going to spit it out anyway!

And, that’s it, your simple summer salad with watermelon is ready!
