Sneaking something good into my food is how I manipulate myself into eating healthy.
I can do it directly too but it gets old and falls into a boring routine. I end up abandoning the healthy snacks I make and they go to waste.
Once in a while, I try to do something about it because I need more iron than usual. I am not happy about it. I have to try harder to be healthy. Who would like that?
This time I choose juicing because they are easy to make and I had more citrus fruits at hand. There is no harm in juicing a citrus!
You could call this recipe a ‘refrigerator cleaner’ too because I used leftover beetroot.
It’s been quite a while since I written anything on WordPress. So bear with me if I am dragging this out. Food blogging block? Maybe.
I loved to pack smoothies when I go out. One major problem with them is oxidisation, that is, they turn darker in colour after a while if you used banana in the smoothie. It wouldn’t look appetising. Taste is retained, though.
This raw immunity boosting juice doesn’t deal with oxidising problem.
- Because it has no banana
- It’s not a smoothie. hehe. No brainer, right?
I worked with raw beetroot in this recipe, if you want you can steam and juice it.
It’s not a season for orange here, tangerine came to the rescue. Thank you!
All you have to do is,
- use a manual juicer to extract juices of tangerine and lemon.
- blend peeled and raw beetroot chunks in a blender with a cup of water, puree and strain.
- Mix all the juices in a pitcher. No sugar was added for this recipe. Use white sugar if you want and serve chilled.

Raw immunity boosting juice
Prep Time: 5 minutes
Cook Time: 15 minutes
Servings: 3 people
INGREDIENTS
1 large beetroot peeled and cut into chunks
3 cups water
3 tangerince juiced
1 small lemon juiced
INSTRUCTIONS

- Add a cup of water and blend beetroot chunks into a puree. strain and set aside.
- In a large pitcher, add strained beetroot, tangerine and lemon juice. Chill in the fridge and serve after an hour or after the juice is cold.
RECIPE NOTES
- Raw immunity boosting juice is void of any added sugar. One can add white sugar to taste if they want.
