Protein chip cookies – Learn how to use the protein balls in a more interesting way.
It’s all about manipulating your brain that doesn’t want to eat healthy. Thumbs down.

The story starts like this. I make protein balls/bites to up my iron intake. Sometimes when I store them in the fridge and if eaten cold, my throat itches. That is why I wanted to keep it out in an airtight container this time, I thought the oil in the almonds will act as a preservative. But what did I do? I didn’t touch them at all.
I was afraid of the sesame seeds. What an irrational thought! I included them for a purpose and was afraid of kick starting my menstrual cycle. Duh.
Then I decided that I shouldn’t let the bites go to waste. Since I had a little butter left, I thought I could just make ‘protein chip’ cookies. It sounded yummy just like chocolate chip cookie. Who doesn’t like them?
I literally live for them. But I set boundaries between the cookies and I by promising myself that I will only buy chocolate chip cookies when I visit certain supermarket. I have zero thoughts about them otherwise.
Conveniently, I don’t often visit the store and I am saved from going crazy over choc chips. Haha.
Another thing about eating your favourite things all the time is that it won’t be your favourite anymore. Just a normal cookie you munch on everyday!
Favourites should be devoured only once in a while! Otherwise they lose their precious place in your heart.
Since chopped protein chips are somewhat sticky, they are combined with wheat flour and then passed through a sieve to separate chips and flour.
Protein chip cookies are not just made of wheat flour, it has oats and almond meal too. They are sugar-free. I try as much as possible to only use Jaggery(Indian sweetener) in my recipes. All the cakes you find at Brains and Beans are exclusively made of it.
The benefit of using Jaggery lies both in its nutritional value and the fact that you cannot overeat them. Sometimes I wonder if that is why our ancestors used it.
Obviously, the taste is different but it’s nothing compared to the health benefits you reap of it.
I won’t exactly call this recipe healthy or unhealthy since it has butter but is definitely better than oil.

Protein Chip Cookies: The edible fake choc chip cookies
Prep Time: 20 minutes
Cook Time: 18 to 20 minutes
Servings: 17 cookies
INGREDIENTS
1/2 cup wheat flour
1/4 cup Instant oats
7 Almonds small
3 Protein bites chocolate flavoured
3/8 cup Unsalted butter softened
1/4 cup Pounded jaggery loosely packed
1/8 teaspoon Tablesalt
1/4 teaspoon Baking powder
2 tablespoon Milk room temperature
1/8 teaspoon vanilla essence
INSTRUCTIONS
- Chop the protein bites into small pieces, mix them with the wheat flour and pass it through a sieve to filter. Set aside.
- Grind quick cooking oats and almond in a blender until powdery.
- Preheat oven for 190 degree Celsius for 10 minutes.
- In a medium-sized bowl, whisk together unsalted butter and jaggery until the no grains of jaggery are pointed out separately.
- Add milk, vanilla essence and whisk until combined.
- Sift wheat flour, grounded oats and almond, along with salt and baking powder into the butter mixture.
- Gently mix until all the ingredients are combined to form a cookie dough. Add the chopped protein chips and fold.
- Shape the dough into an inch thick (in diameter) balls and place it in a greased cookie sheet. Flatten them a little with fingers.
- Bake for 18-20 minutes or until the cookies are slightly browned on the bottom.
RECIPE NOTES - Store the cookies in an air-tight container.
- Protein chip cookies are a little crumbly. Carefully bite into the chips as they can get stuck in teeth. Nothing drastic or worrisome.
