Minimal Sandwich Filling With Carrots is definitely one of the easiest to make at home. Only two main ingredients are required.
All you have to do is saute the vegetables and season it. Easy as that.
These used to be after school snack whenever we hit the bakery on the way home. Stacked and covered along side the “Friday” bread the bakeries sold. Friday bread( Vellikizhamai Rotti in Tamil language) was actually a stuffed braided bread whose name I got to know after exploring the world of Baking.
Those sandwich filling looked complicated and curried. Keyword: Looked. After tasting, it was clear that nothing foreign or fancy was added. It was a plain sweet bread toasted and filled with grated carrot, onion and something else we couldn’t quite put our fingers on.
Like any sane person, we analysed its anatomy, physiology, aromachology(that’s a lot of -ology) and decided to make it ourselves. It turned out pretty close to original filling because of course the bakeries have their ‘secret’ ingredient.
I completely forgot about this snack and it might have at least been five to six years since I made it.
Since I am a self entitled clean eating minimalist foodie, I drastically reduced the oil used by both the bakery and us.
Commercial pre-sliced semi sweet bread is used in this recipe. You can also try with homemade whole wheat bread. I couldn’t bring myself to make one in this gut-wrenching Summer *fans herself*.

Minimal Sandwich Filling with Carrots – Easy & Bakery Style
Prep Time: 10 Minutes
Cook Time: 15 to 20 Minutes
Servings: 3 Sandwiches
INGREDIENTS
For the filling
1 Tablespoon Sunflower oil or any neutral oil
1 Cup grated Carrots
1 Cup sliced Onion loosely packed
1/2 Teaspoon Minced green chilli
A pinch of turmeric
A pinch of chilli powder
1/8 Cup Water or more
1/4 Teaspoon Salt or adjust to your taste
For the toast
6 slices of Semi-sweet Bread
1 Teaspoon Unsalted Butter or less
INSTRUCTIONS
- Heat a wok or kadai over medium heat. Once hot, add the sliced onion and fry till they turn translucent. Add the minced green Chilli and grated carrot. Mix well.
- Add turmeric and Chilli powder. Season with salt. Sprinkle some water. Saute for a minute.
- Cover and cook for about 10 to 15 minutes or until carrots are tender.
- Mix the filling every 7 to 10 minutes. Since we are using less oil, filling sticks to the bottom easily. Switch off the stove when done.
- Heat some butter in a pan and slightly toast 6 slices of bread. Divide the filling into three portion, make three sandwiches and serve
RECIPE NOTES
- Don’t pour water, only sprinkle.
- A cup is 240 ml in this recipe.
